Cocoa mass

Cocoa mass is the key ingredient for creating the desired taste profile of chocolate. To make our cocoa mass, we roast our special blends of high-quality beans and grind the cocoa nibs into mass.

As well as supplying mass from our own facilities, ECOM Cocoa has one of the world’s biggest trade books for mass. Our direct relationships with farmers and co-operatives mean we can also offer single origin cocoa mass to support a range of sustainability and branding opportunities. We offer mass that is certified under Rainforest Alliance or Fairtrade , as well as organic.

Cocoa butter

Cocoa butter is the essential ingredient for establishing the required consistency of chocolate and controls the texture and feel of chocolate for consumers. It is extracted by pressing cocoa mass.

As well as supplying butter from our own facilities, ECOM Cocoa has one of the world’s biggest trade books for butter, which allows us to supply from a wider global range. We offer deodorised and natural cocoa butter in liquid and solid forms. Customers can choose butter that is certified under Rainforest Alliance or Fairtrade , as well as organic.

Cocoa cake

Cocoa cake is produced when we press our mass into butter, which leaves behind cocoa cake. We offer our cake in both natural and alkalised forms.

Cocoa powder

Cocoa powder offers the widest range of uses of all our cocoa products. It is used in fillings, ice creams, baked goods, compound chocolate, drinks and more, providing the rich taste consumers want and the colours they expect. The taste of the powder depends on the beans, alkalisation and roasting processes, all of which will impact the intensity of the finished product. The beans and techniques used by our ECOM brands combine to offer a greater variety of colours, flavours and applications.
